Using up garden goods – beets, beet leaves, green onions for this colorful salad. Also added red cabbage, avocado, celery and I don’t remember what else. I am using just a ACV and olive oil dressing these days with no honey. Trying to lose those pounds. Down to 152.2 today – must lose around 10 or more pounds. It’s doable !

I love seeing these Iris flowers open up – so lovely.

My 10 day veggie fast/diet has been altered. I can’t keep up with day-to-day activities in starvation mode. I have decided to eat veggies 10 days per month and not to go over 3 days eating normal food until the 10 days of veggies are completed.

Today was a pancake kind of day for our family. Also put some of our garden turnip greens into the quinoa and lima beans and seasoned with Braggs Aminos and ginger powder. Was pretty good. And much of the salad was from our garden – spinach, violet leaves, carrot top leaves, green onions and parsley. Yum. And more radishes.


Going to try this recipe today.

Here’s abbreviated version of the recipe:
3 lb. cabbage
1 1/2 T. kosher salt
1 T. caraway seeds (op.)

2 qt. jar.
smaller jelly jar
clean marbles
rubber band

To make 3 pounds, I needed to add some red cabbage I had on hand. A 3 pound cabbage is big evidently!
Slice cabbage (not outer wilted leaves)
Cut into quarters and trim the core.
Slice each quarter down its length making 8 wedges.
Slice each wedge crosswise into very thin ribbons and put in mixing bowl.


Combine cabbage and salt by putting cabbage in mixing bowl and sprinkling salt over. Massage and squeeze with hands for 5-10 minutes. Put in optional caraway seeds.
Pack into jar, use funnel. Tamp down into jar with fist. Pour any liquid into the jar. – op. – put a large out leaf over sliced cabbage.

All liquid and cabbage should be in the jar. Put smaller jelly jar into it and weigh it down with stones or marbles.

Cover jar with cloth and secure with rubber band or twine, which allows air flow. 2jkik

Press cabbage every few hours over next 24 hours with jelly jar.

Add extra liquid if needed. If after 24 hours liquid hasn’t risen above cabbage, dissolve 1 tsp. salt in 1 cup water and add enough to submerge cabbage.
Ferment 3-10 days out of sunlight at 65-75 degrees. Taste after 3 days. When you like it, put on lid and refrigerate. Can scrape off scum. Will store for several months.

UPDATE – it’s been about 48 hours. Here is some foam on top which means fermentation is happening.

food colors and book

I’ve been reading the book, The Banks of the Boyne: A Quest for a Christian Ireland (1998) by Donna Fletcher Crow. I’ve learned so much about Ireland; she is a wonderful writer. One reason I wanted to read it is to get my mind off our problems in the U.S. of A. It has helped I think.

While I was making the following picture about food colors on, I listened to an interview on CBN with Elliott Abrams who wrote the book, Tested by Zion. It would probably be good reading, but maybe I’ll read it later.

I got this food colors information somewhere and it is helpful to know what different colored foods will help us with.

Yay – another week almost finished. – 5 more weeks until dear daughter is on her way – to her destination – happy for her. I drove (or rode) with her to work – she works 7-4 today – didn’t want to be w/out a car all day. I want to mail my stocking hats and blanket to Cure International – the DJ from k-love will be leaving in 2 weeks so want to get them there in time – otherwise – Cure Intl. will make good use of them there later or some other place.

I came home and finished this “ugly quilt” Took about 2 hours – less if I wouldn’t have made the bag. There was extra because one sheet was king sized. I didn’t sew the comforter to the 2 sheets I sewed together; that way, if necessary there will be a sleep sheet for the warmer weather.

Now I need to make a cabbage/tofu salad because I have both ingredients. Found a recipe from and modified it quite a bit into the following recipe.

Tofu and Cabbage Salad with Almond Dressing

1 T. olive oil
1 lb. tofu, 1/2 inch strips lengthwise
1 medium head cabbage, chopped (about 2 1/2 c.)
cucumbers, broccoli or cauliflower or similar veggie
2/3 c. ch. green onions or leeks

Almond Dressing
1/2 c. plain yogurt
1/4 c. almond butter
1/2 tsp. Braggs Liquid Aminos

Saute tofu in heated oil 4 minutes on each side.
Combine veggies in a bowl.
Mix dressing ingredients with 2 T. water.
Pour 3/4 dressing over vegetables and toss.
Top salad with tofu strips and drizzle on remainder of dressing.

I packaged up the hats and blanket for CURE and also have one to mail to Knit for Kids that’s been sitting around too long.

black bean cabbage pasta salad

got this from the and changed it some for my use.

Black Bean Cabbage pasta Salad

1 can black beans, drained and rinsed
1 can kidney or pinto beans, drained and rinsed (I used pork and beans, drained and rinsed)
1/2 large red or green pepper, diced
1/4 red onion, diced
2 green onions, diced (I used chopped leeks)
canned or fresh chopped tomatoes
1 stalk celery, diced
1 avocado diced (optional)
2 cups shredded cabbage
1/4 cup chopped cilantro (or use dry or dried parsley)
1 Tbsp dried oregano
1/2 tsp garlic salt
1 tsp hot chili powder
salt and pepper to taste (I used lemon pepper
1 tsp red hot sauce (optional)

Made dressing of olive oil, acv and honey and added a little Italian balsamic dressing. yum
also added pasta
