Vegan Brown Rice Pudding/Snow days

Cook 1 cup brown rice in 3 cups water; boil; cover; set on low; let cook 20 minutes; turn off burner and let set, covered, 30 minutes.

Add:
1 1/4 c. almond milk
1/3 c. raisins
1/3 c. maple syrup or agave
1 tsp. vanilla
1/2 tsp. cinnamon
1/4 tsp. ginger
1/8 tsp. nutmeg

Mix all and transfer to a bowl to cool in refrigerator. Sprinkle cinnamon on top to serve.
